Wellthy Tastings February: Mardi Gras Snackle Box featuring Chocolate Peanut Butter Hummus

It’s our favorite time of the year down here in New Orleans: Mardi Gras! Today, we’ll be making a Mardi Gras snackle box, full of delicious and nutritious treats for you and your family to enjoy out on the parade route. Snackle boxes are a fun way to pack a variety of healthy treats and snacks.

Our main treat we’ll be making for our snackle box today is a delicious chocolate peanut butter hummus! This protein packed treat is full of fiber, Vitamin E, Iron, B vitamins, and magnesium to keep you full and energized while walking the parade routes and catching all the beads!

Here’s what you’ll need to make our chocolate peanut butter hummus:

  • 1 (15 oz) can chickpeas/garbanzo beans
  • 1/3 cup peanut butter
  • 1/3 cup maple syrup
  • ¼ cup cocoa powder
  • ¾ tsp vanilla extract
  • 1/8 tsp sea salt
  • 2-3 tbsp water

You can pair this sweet hummus treat with strawberries, bananas, apples, pretzels, or graham crackers. Don’t forget to grab a bento box or tackle box to serve your hummus and snacks in!

  1. Microwave undrained chickpeas in a microwave safe mixing bowl for 4-5 minutes or until softened.
  2. Strain the chickpeas and add them to a food processor. Then, add peanut butter, maple syrup, cocoa powder, vanilla, and salt.
  3. Process until smooth and scrape the sides if needed. When the mixture is mainly smooth, continue to run the processor and add 2-3 tablespoons of water until you reach your desired consistency.
  4. Feel free to adjust to your taste buds by adding more peanut butter, cocoa, or maple syrup.
  5. Serve with sliced fruit, pretzels, put it on toast, or just grab a spoon and enjoy. Feel free to add some more goodies to your snackle box so that you can stay fueled all day!

As we always say down in New Orleans, let the good times roll! Here’s to a safe and healthy Mardi Gras season!
