Wellthy Tastings December - Hot Cocoa Mini Cheesecakes

It’s the most wonderful time of the year and today, we’ll be making a fun holiday treat, some hot cocoa mini cheesecakes, that are sure to leave you feeling jolly. The protein, probiotics, and calcium from our Greek yogurt helps pack this merry treat with some good nutrients. It’s important to note that all foods can fit into a healthy diet and there is no need to restrict foods that bring joy during the holiday season! These hot cocoa mini cheesecakes are also a quick and easy treat to bring along to your holiday parties.

Here’s what you’ll need:

Ingredients:

  • 12 hot cocoa flavored Oreos (can use regular Oreos if not available)
  • 8 oz cream cheese
  • ½ cup Greek yogurt
  • 2 tbsp + additional for sprinkling hot cocoa mix or powder
  • 1 tbsp maple syrup
  • 1-2 tsp vanilla extract
  • Pinch of salt
  • Cool Whip topping
  • Mini marshmallows

Directions:

  1. Using a food processor, pulse a few times until you have fine crumbs for the crust.
  2. Spray muffin tin with nonstick spray and divide Oreo crumbs between 12 muffin tins. Gently press the crumbs into the bottom of each serving dish with a small glass. Place the pan in the freezer to firm up the crust while you make the filling.
  3. In a food processor, stand mixer, or medium bowl with hand mixer, combine cream cheese, Greek yogurt, hot cocoa, maple syrup, vanilla extract, and salt. Mix on low speed until all ingredients are well combined.
  4. Spoon or pipe cheesecake filling into each serving cup.
  5. Spoon or pipe Cool Whip onto each mini cheesecake, then sprinkle additional hot cocoa mix and top with mini marshmallows on each cake.
  6. Place mini cheesecakes into refrigerator for at least 1 hour to set. Use a spoon or knife to loosen the edges of each cheesecake then pop out of muffin tin and serve.
