Wellthy Tastings January – Roasted Veggies copy/recipe

It’s a new year, which means new resolutions and new beginnings! And what better way to jump into the new year than with some tasty roasted veggies! On this episode of Wellthy Tastings, we are going to show you an easy way to roast vegetables! This technique works with any of your favorite vegetables and favorite seasonings, the most important thing to note is that your vegetables should be similar in size so they will cook evenly.

Here’s what you’ll need:

  • 1 small-medium sweet potato, diced
  • 8 oz mushrooms, large diced
  • 1 small head broccoli, cut to florets
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 3 tablespoons Salt Free-Italian seasoning
  • 2 teaspoons pepper
  • 3 tablespoons olive oil
  • Optional: Parsley for garnish

Directions:

  • Preheat the oven to 400 degrees F. Line your baking sheets with foil.
  • Place chopped vegetables in tray and drizzle with the olive oil. Sprinkle with Italian seasoning and pepper, then toss to coat.
  • Roast the vegetables until tender, about 18-20 minutes.
  • Garnish with some chopped parsley and serve!

This is one of our dietitian’s favorite cooking techniques because it’s quick, and very versatile! You can have this as a side dish or you can mix these vegetables into other recipes to elevate your eating. Let’s make this year an extraordinary one!
