Wellthy Tastings April - Spring Time Granola

It’s April which means it’s allergy season over in the big sneezy... we mean big easy! Today, we’ll be making an easy and delicious granola recipe! Not only is granola yummy, but it is full of nutrients that help support your immune system.

Here’s what you’ll need:

  • 4 cups rolled oats
  • 1 ½ cup nuts and seeds of choice. I prefer 3/4 cup walnuts and ¾ cup almonds
  • ½ cup olive or or melted coconut oil
  • Pinch of salt
  • 1 tsp cinnamon
  • 1tsp turmeric
  • ½ cup honey (using local honey is preferred as local honey will reflect the local pollen and help
  • with allergies)
  • Optional: dried fruit, chocolate chips, coconut flakes

Directions:

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • In a mixing bowl, combine all of the ingredients starting with the dry ingredients and finishing with olive oil and honey. Mix until the oats and nuts are lightly coated.
  • Spread your mixture onto the baking sheet in an even layer.
  • Bake for 20-25 minutes or until oats are golden. Be sure to give the granola a stir about halfway through so it cooks evenly.
  • Let your granola cool, then mix in any additional toppings you’d like, such as dried fruit, coconut flakes, or chocolate chips. I like mine with craisins.
  • Sprinkle your granola over non-fat Greek yogurt with fresh fruit and local honey for a parfait!

The best part about this recipe is that you can store your granola in an airtight bag or container for 2 weeks or freeze it for up to 3 months. You can eat it plain, add it to a salad or even put it on top of ice cream to change things up!
